Recipes for Weight Loss

Eating healthy doesn’t mean sacrificing flavor. Here are some great tasting recipes that will help you in your battle with weight loss.

 

CHICKEN SALAD

Ingredients

8oz.chickenbreast,cooked
1cuplettuce
1apple,dicedorcubed
1/2cupfreshmushrooms,sliced
1 tsp. lite mayonnaise

Directions

Mix all ingredients together.

 

SWEET AND SOUR CHICKEN

Ingredients

8oz .chicken breast (skinned and boned)
1 cup raw chopped cabbage
Juice of ½ fresh lemon
Several drops of artificial sweetener
Morton Lite Salt and pepper to taste

Directions

Combine all ingredients and simmer gently in covered pan for 30 minutes.

 

Grilled Steak with Caper-Herb Sauce

Ingredients:

  • 1 (1-pound) boneless sirloin steak
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Cooking spray
  • 1 cup flat-leaf parsley leaves
  • 1 cup basil leaves
  • 2 tablespoons thinly sliced green onions
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fat-free, less-sodium chicken broth
  • 1 tablespoon capers
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, chopped
  • 1 canned anchovy fillet, chopped

 

Directions

  1.  Prepare grill to medium-high heat.
  2. Sprinkle steak with salt and pepper. Place steak on a grill rack coated with cooking spray; grill 6 minutes on each side. Let stand 10 minutes.
  3.  Combine parsley and remaining ingredients in a food processor; process until blended. Cut steak diagonally across grain into thin slices. Serve with sauce.
  4. Grilled garlic bread: Grill 4 slices French bread 2 minutes on each side or until browned. Brush each slice with 1 teaspoon olive oil; rub with halved garlic clove.

 

Santa Fe Grilled Chicken Soft Tacos       

 

Ingredients:

  • 2 tablespoons chili powder
  • 2 tablespoons cumin
  • 1 tablespoon paprika
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon packed dark brown sugar
  • 2 tablespoons olive oil
  • 2 1/2 pounds boneless, skinless chicken breasts, trimmed and pounded thin (about 4 large breasts)
  • 16 taco-size soft flour tortillas

Directions

  1. In a small bowl, combine chili powder, cumin, paprika, red pepper, salt, pepper and brown sugar. Stir in oil; mixture will be moistened but crumbly.
  2. Generously rub chicken on all sides with chili mixture. Let stand at room temperature for 30 minutes to marinate (or cover and refrigerate for up to 1 day).
  3. Preheat gas grill to medium, or preheat broiler to high and set rack 6 to 8 inches from source of heat. Grill or broil chicken until firm, about 5 minutes per side. Let cool for 5 minutes, then cut into thin strips.
  4. Warm tortillas as package label directs. Serve chicken with tortillas.

 

Breakfast Pizza

Ingredients:

  • 1 (8-ounce) can reduced-fat refrigerated crescent dinner roll dough
  • Cooking spray
  • 12 ounces turkey breakfast sausage
  • 1 cup frozen shredded hash brown potatoes, thawed
  • 1 cup (4 ounces) shredded fat-free cheddar cheese
  • 1/4 cup fat-free milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 (8-ounce) carton egg substitute
  • 2 tablespoons grated fresh Parmesan cheese

Directions

  1. Preheat oven to 375°.
  2. Separate dough into triangles. Press triangles together to form a single round crust on a 12-inch pizza pan coated with cooking spray. Crimp edges of dough with fingers to form a rim.
  3. Cook sausage in a large nonstick skillet over medium heat until browned, stirring to crumble. Drain.
  4. Top prepared dough with sausage, potatoes, and cheese. Combine milk, salt, pepper, and egg substitute, stirring with a whisk. Carefully pour milk mixture over sausage mixture. Sprinkle with Parmesan. Bake at 375° for 25 minutes or until crust is browned.
