Special K is not just for eating at breakfast cereal time anymore. There are many other items you can make with the tasty Special K cereal. Here are some recipes to make with Special K.

Special K Bars

Minutes to Prepare: 2

Minutes to Cook: 15

Number of Servings: 24

1 cup white sugar
1 cup light corn syrup
1 cup peanut butter
6 cup Special K Cereal
1 cup butterscotch chips
1 cup chocolate chips

Boil the sugar and the corn syrup at a full boil for 30 seconds, stirring constantly. Stir in the peanut butter. At this point either stir in the special K (if you used a large pot) or pour the mixture over the special K cereal in a mixing bowl. Place the cereal mixture in a well greased 9 X 13 pan. Melt the butterscotch and chocolate chips together and pour over the cereal mixture. Eat whenever you desire.

Notes: For easy cutting, let cool for an hour or so and then cut them all up. Do not smooth or compact the special K mixture or topping more than the minimum required to spread it.

Special K Cookies

1/2 cup (1 stick)butter or margarine; softened

2/3 cupsugar
1 tspVanilla
1 egg
1 cup + 2 tbspflour
1 1/2 tspbaking soda
1/2 tspsalt
1 cupSpecial K; finely crushed
2 cups or moreSpecial K; lightly crushed

Preheat oven to 375 degrees

Spray cookie sheets with nonstick cooking spray.

Beat together the softened margarine, sugar, vanilla and egg. In a separate bowl stir together the flour, baking soda and salt. Gradually add the flour mixture to the margarine/sugar mix and beat until smooth. With a spoon, stir in the cup of finely crushed Special K.

Take a few handfuls more Special K and crush lightly and place in a shallow bowl. Roll dough by generous tablespoons full in the lightly crushed Special K to coat and place on the cookie sheet about 2 inches apart, do not flatten. Bake at 375 for 8 minutes or until light brown around edges, do not overbake. Cool on rack. This makes about 36 cookies.

Special K Bars

1 cup light corn syrup

1 cup white sugar  (I used less)

1 cup peanut butter (creamy or crunchy)

6 cups special k cereal (experimemt – use any variety)

12 ounce bag of chocolate chips or chocolate bars melted

In a bowl stir syrup and sugar and melt in microwave for a couple minutes just until the sugar is dissolved.

Then stir in the peanut butter and combine well.

In a larger bowl add your cereal following with your peanut butter mixture.   Mix well.

Spray or butter a baking pan (the bigger the pan the bigger thinner the bars) – and press the cereal mixture into it.  Afterwards, melt your chocolate in the microwave (in batches is easier and quicker).  Spread over your cereal like icing.

I then cover and place my pan in the refrigerator to let firm
